Surrounded by a labyrinth of waterways and an abundant coastlines Ho Chi Minh City (aka Saigon) is the thumping, banging and drilling heart of Vietnam. The trading city of Vietnam southern states, it is often regarded as the rowdy barrow boy of the south, in comparison to the stately capital in the north Hanoi. I know where I would rather be… Venture outside this great city and you are soon following the arteries and veins that keep this heart beating. The waterways and paddy fields of the Mekong Delta provide this heavily populated region of South East Asia with a vast amount of rice, fish and produce. Food is everywhere in Southern Vietnam, whether its being grown, prepared or consumed. Here are a collection of some of the recipes I was lucky enough to enjoy while cycling, floating and eating my way around Southern Vietnam.
