Easy Turkey Curry

Tis' the season to be jolly, but as the price of living gets higher and higher finding reasons to be cheerful can prove tricky  but one reason to smile is the surplus of turkey on our shelves.
If you thought turkey was just for Christmas, think again. Turkey is a Superfood and is the only meat included in 14 foods known to help you live a healthier, longer, life. 

So here in celebration of our fine festive bird is an alternative turkey recipe given to me by my good friend and superb cook Di Pyper. An old school country cook Di uses what she has in her cubpords and her kitchen is a mad house of dogs, ingredients and dirty pot and pans. But like no other person I know, Di can cook an exceptional meal for 20 people without batting an eyelid.  Here is her quick turkey curry recipe. 
  • 1 large onion chopped
  • 3 cloves of garlic
  • 1 tbs ground corriander
  • 1 tbs ground cumin
  • 2 tps turmeric
  • 1 chopped chilli
  • 5 crushed cardomen pods
  • 1 cinnamon stick
  • 1 large knuckle of ginger peeled and chopped
  • 1 tin of tomatoes
  • sweet mango chutney
  • one tin of coconut milk 
  • 500g turkey breast meat

1. Sweat the onion and garlic on a gentle heat
2. Add all the spices stirring well with a wooden spoon for a couple of minutes
3. Add the turkey turning each piece until brown on each side
4. Pour in the tin of tomatoes season with salt and pepper and simmer for 25 mins until much of the residue liquid has evaporated and you have a sticky curry sauce. 
5. Remove lid and stir in 3 tbs of sweet mango chutney
6. Add tin of coconut milk and slowly simmer for a further 15 minutes

Server with rice, naan bread and all the other trimmings and enjoy

  1. Turkey curry is compulsory boxing day eating for us, I might try your recipe to make it a tiny bit different!
