Polvo ao Vinaigrette. Octopus Salad. Bahia, Brazil.

Octopus are plentiful in the rock pools that hug the pristine beaches of Bahia in North Brazil, and after a hot day sweating in the saddle there is no better treat that sitting down to share a plate of this refreshing salad with a couple of cold beers.

This recipes was found while cycling in Brazil in 2007. 
  • 1 kilo of fresh octopus tentacles, cleaned
  • Small bunch of spring onions
  • 2 cloves of garlic, finely chopped
  • 1 onion chopped
  • Half a Cup of lime juice
  • Half a Cup of good olive oil
  • 2 tomatoes, chopped
  • Bunch of fresh cilantro
  • Salt

1. Place your octopus tentacles in a large pan, cover with water, add a little salt and bring to the boil. Reduce the heat and leave to simmer for one hour.

2. With a fork, remove the octopus tentacles from the pan and once cooled a little cut into small pieces a centimeter or so wide.

3. Now place your chopped octopus tentacles in a large bowl, add the remaining ingredients and give it all a good toss.

4. Serve warm and enjoy with plenty of cold beer.
