Pie, pie, pie, pie Pie, pie, pie, pie or was it meant to be spam? While cycling in americas Midwest in 2005 I developed a deep love for home-made pie and you cant pass through a small town in the Midwest without finding one. So you can all recreate that Midwest diner feel in the comforst of your own homes here is a recipe for one of my favourites. (Dust-covered old farmers drinking coffee not included.)
1 cup sour cream
1/2 cup of orange juice
3/4 cup brown sugar
1/2 teaspoon salt
2 egg yolks
1 roll of pie pastry (you can make your own if you want)
2 tablespoons flour
3 cups peaches, sliced
1. Blend sour cream, orange juice, brown sugar, salt and egg yolks.
2. Roll out your pastry and line a pie dish. Sprinkle with a little flour.
3. Pour in peaches and sprinkle with remaining flour. Pour sour cream mixture over peaches.
4. Cover the pie with the remaining pastry. Bake 425F for 15 minutes, then 350F for 30 minutes.
