Ask people what they know Laotian cuisine and faces often go blank. Closed to tourism for so many years, little is know of this small landlocked country in South East but as her tourist industry improves the charms of her cuisine are taking on Thai and Vietnamese cuisine for its simple and healthy appeal. River fish, water buffalo and pork are key to Laotian cuisine as well as the use of chilies, mint, lemongrass and fish sauce and bundles of fresh herbs.
