Cudighi (don’t ask me how to pronounce it)

This super-filling Italian style sandwich is a deli favorite in the Michigan towns of Ishpeming and Negaunee and Marquette.

My brief, and highly embarrassing, appearance on NBC Channel Six news, made me somewhat of a small town celebrity in the UP of Michigan. But sadly the towns here are so small that all it amounted to was a few car honks, I don’t think I was riding recklessly, and the occasional wave. But it did introduce me to this local recipe and a great evening on the banks of Beaufort Lake.

  • 6 lb coarsely ground pork
  • 1 clove garlic chopped fine
  • 1 tsp crushed red pepper
  • 6 tsp salt
  • 2 tsp fennel seeds

1. Mix teh above ingredients in a large bowl and then form into 1/2 thick oblong patties. 

2. Grill for three or four minutes on either side on a hot griddle. (the same way you would a burger) 

3. Serve on a fresh bun such as Kaiser roll. 

4. Compliment your grilled Cudighi with combinations of grilled green pepper and grilled onion, mustard, mozzarella, salad or whatever your “heart desires.
