For five happy months on my pedal powered food quest through the Americas, I took to the back roads and kitchen of Colombia. Not know for its cuisine, the food here was a revelation. Hearty and hard working – just like its people it was full of variety and flavour. With refreshing ceviches in Cartagena, sanchocho in the coffee growing region and empanadas in Cali, Colombian cuisine has it all. Washed down with a gloruouse cup of ‘tinto’ coffee Colombia is a near perfect cycling and eating destination! Below are a selection of my favorite recipes from this beautiful country.
