Chipotle Mayonnaise – The Ceviche Supper Club Recipes
Chipotle Mayonnaise is magical stuff. It transforms the already wonderful substance of mayonnaise into a smoky sweet spicy concoction that transforms any taco or sandwich into something sublime. Make plenty and keep it in your fridge. At the ceviche super club we use for our tuna tostadas. Here is the recipe.
- juice of one lime
- 2 large egg yolks
- large teaspoon of salt
- 1/2 cup light olive oil
- 1 chipotle chili
1. Put lemon juice, egg yolks and salt in a blender. Slowly start blending the ingredients, adding oil little by little, until the mayonnaise is smooth and thick.
2. Add the chipotle chile and blend in. Multiply this recipes and make loads for emergency sandwich moments.
