From Guatemala to Panama via El Salvador, Honduras and Costa Rica. My bicycle tour of Central America was not an easy one. The roads were tough to ride, the heat was unforgiving and at times the standard of living of others left me upset. But at three times a day I found comfort in the food of this area. Often simple and never far away from the ubiquitous rice and peas the food in this part of the world is full of flavour and makes use of all the tropical fruits and vegetables on hand.
